How Do You Like Your Eggs?

Hello friends!

Well, we are hitting the true middle of summer, where everyone is out and about and off doing their own things in the heat! Because of that, it’s easy to fall into the summer habit of just eating whatever you’d like, and playing it out of your system later. But your body still needs proper replenishment! So today I have just a quick thought for you on breakfast & what that should look like for all of us.

Breakfast has had some conflicting claims over the years, about whether it’s important or not. The reality appears to be, it depends on the person! Some people do well eating breakfast, and others do better if they fast until a little later in the day. (Side note: if the reason you don’t eat breakfast is because you are nauseous in the morning, you have a different issue and you should probably come chat with us).

The universal claim that I will make is that no matter when that first meal is, it NEEDS to have protein in it, and a good amount. Don’t start your day off with sugar on its own, even in fruit form. This starts our bodies off on a blood sugar spike that inevitably is going to crash. Get some protein into you! My favorite easy healthy form? Eggs! They’re full of good protein, fats, and other vitamins that your body will happily absorb, to sustain your blood sugar and energy levels throughout the day. So here’s a few quick recipes to start your morning off strong!

Egg Tacos:

  • 2 eggs, scrambled
  • Corn tortillas (preferably without preservatives)
  • Hot sauce
  • Any additions you want to add!

These are such an easy and simple thing to throw together. Scramble up the eggs, warm your tortillas and toss them together! If you want extra flavor, you could add a bit of cheese, sausage or avocado. The goal is to have things that are simple, so you will actually make them instead of reaching for the cereal box.

Eggs & Rice:

  • 2 (or more!) eggs
  • 1-2 scoops of precooked brown or white rice
  • 1 tbsp liquid aminos (soy sauce alternative)

This is basically egg fried rice for breakfast. There’s two options here, but they start the same. Reheat & slightly toast your already cooked rice in a little butter in your pan. When it’s heated through, add the eggs and aminos to the same pan and scramble together. Alternatively, you could fry the eggs to your liking and just plop them on top of the rice. Whatever floats your boat! Tasty, easy, satisfying!

Egg Scramble:

  • 2 eggs
  • 2 oz ground sausage (Jimmy Dean’s All Natural is a great option)
  • ¼ white or yellow onion, diced
  • ¼ red bell pepper, diced
  • A sprinkle of cheddar cheese

This is a one pan recipe, and you could easily prep the veggies ahead if you wanted! Start by sauteing the onion & bell pepper together in a pan. (A note: saute in butter, olive oil, or avocado oil. Other seed oils are a no-go!) As they soften, add the sausage and cook all the way through. Then throw in the eggs and scramble it all up. As the eggs are almost done, sprinkle in the cheese to let it melt. Voila, a perfectly high protein breakfast!

Folks, eating protein for breakfast does not need to be hard. If you hate eggs, find plain Greek yogurt, cottage cheese, ANYTHING, to get that protein in. Your body will thank you for it.
